Century egg is a Black eggs, or thousand-year eggs are typical Chinese food made from chicken eggs or ducks preserved in a mixture of clay, ash, salt, quicklime and rice husks for several weeks or up to several months, depending on the process method. As long as it is preserved, the yolk will turn dark green and become creamy with the smell of sulfur and ammonia, while the egg white turns brown and slightly transparent.
The eggs change due to the presence of materialalkalin which raises the pH of the egg to 9 or more. This chemical process destroys some of the complex protein and fat content in eggs which initially tastes tasteless and smells strong. Sometimes eggs have patterns like a pine branch in the white.
Some people call this one thousand year egg because the manufacturing process is quite time consuming. Stored for quite a long time for centuries. Because it's called the century egg.
According to legend, the century egg had been around since the Ming Dynasty in China. The inventor of the dish made from duck eggs, quail, and chicken was a resident from Hunan who found a duck egg left in the pool or dead lime and opened the shell and ate the egg.
Because quite a lot of people believe in the legend, they also conducted their own trials. Soaked chicken eggs, ducks, or quails that have just hatched into a bath of salt water mixed with ash, lime, and rice husk.
After passing the soaking time for three to five weeks, the texture of the century egg will change unlike most eggs. Egg yolk feels more creamy, cheese-like texture, and white egg meat turns dark and slightly chewy like gelatin.

While an exact date is unknown, it’s believed century eggs came about during the Ming Dynasty around half a millennia ago as a way to preserve eggs during times of famine.

Century eggs are both unique, and oddly beautiful, so pick some up, cut them into long, small pieces like a flower, thirow some pickled ginger in the middle and put them out for guests.
